Our Extra-Virgin Olive Olis

Selection

Olivastra Saggianese

Monocultivar

100% Olivastra

The olives of this variety—which grows exclusively in the Monte Amiata territory at altitudes ranging between 200 and 400 meters above sea level—are characterized by their small size and a reddish-purple hue during growth, turning black upon reaching full maturity. Harvesting takes place at the end of October when the fruit achieves a distinct purple shade. The color of this oil tends toward a golden yellow; its aromas are green and herbaceous with clear hints of banana, while on the palate, it is delicate and refined.

Leccino / Frantoio

Our Blend

80% Leccino

20% Frantoio

The Leccino tree offers excellent resistance to adverse weather conditions and adapts perfectly to all soil types. Its medium-sized olives feature a firm pulp and shift from a dark green to a purplish-black hue. Harvesting takes place during the first week of November, driven by the variety’s early ripening. The oil obtained from this blend boasts a green color with golden highlights; on the palate, it is slightly pungent with notes of artichoke, brought out by the presence of the Frantoio variety.

Frantoio

Monocultivar

100% Frantoio

The olives used to produce this oil have an oval, elongated shape, resembling a small drop. Their color shifts gradually, starting from a bright green and reaching a purplish-black. Harvesting takes place in mid-October to capture the freshness that will later characterize the oil. It boasts a brilliant green color, while the aroma is intensely herbaceous with notes of artichoke, which reappear on the palate accompanied by a light, pleasant Spiciness.
