In the authentic heart of the Tuscan Maremma was founded Tenuta Salustri, a place where time still seems to follow the rhythm of nature, and every season leaves its mark with discretion and harmony.
Here, the land is not merely a space to cultivate, but a living presence to be listened to and respected. Among rows of vineyards and expanses of olive groves, a balance shaped by experience, care, and dedication takes form every day. It is within this constant dialogue with nature that wines and oils are born, capturing the true essence of the territory—a direct expression of what the land is capable of offering.
It is a silent labor, made of repeated yet never identical gestures, where every choice stems from a profound knowledge of the land and a deep respect for its timing. From the vine to the bottle, from the olive tree to the oil, every stage is carefully tended to, letting nature and time guide the final result.

Cultivating is an act, Preserving is a choice.
The vineyards and olive groves extend across hills at an altitude of around 400 meters, rooted in limestone and volcanic soils that define the character of every single production. Here, every choice stems from a deep respect for nature and the balance of the ecosystem.
Agronomic practices follow the principles of sustainability and organic farming, relying on manual interventions and the constant care of both vines and olive trees. The grape and olive harvests are carried out strictly by hand, with a careful selection that guarantees quality and authenticity. In the cellar and the oil mill, processing is minimal and respectful of the raw material; slow aging and natural processes allow the wine and oil to express the territory at its very best.
The preservation of typicity is also reflected in research: the study of historic vineyards has led to the “Clone Salustri,” a unique Sangiovese biotype developed in collaboration with the University of Pisa—a true symbol of the profound bond between tradition and knowledge.
